
While we're not coffee experts (although sometimes the "Roasters" can throw people off!), we do LOVE coffee, and in the heat of a North Carolina summer, nothing does the trick like a good iced latte. We were inspired by our recent feature in Epicurious to maximize the tasty bits at the end of our nut butter jar to create a spin on this warm-weather fave with a nutty twist, and while we love this with espresso, you can certainly customize this with your favorite addition of choice. Matcha, tea concentrate, or coffee all work beautifully here and let you get creative!
For our latte, we used the remnants of a jar of Chai Spice with espresso, but mix it up—try adding chai concentrate with a Fiji Ginger milk, matcha with Toasted Coconut, espresso with Chocolate Sea Salt—the options are endless (and oh-so tasty). In addition to being delicious, this is also super low-waste, repurposing your jar into a very cute to-go cup or glass for your bev! The best win-win.
INGREDIENTS
- Nearly-empty jar of Big Spoon nut butter (ideally with 1 Tbsp-ish of nut butter!)
- 2/3 cup milk of choice (unflavored/sweetened if you're using non-dairy milk)
- Double shot of espresso or addition of choice
- ice
PREPARATION
- Warm 2/3 cup milk in the microwave or in a small saucepan on medium-low heat until slightly warmer than body temp (IE, when you feel with your finger, it should feel like a warm bath, but not hot).
- Pour milk into your nearly empty jar of nut butter, screw on the lid (tightly, so no leaks), and shake the jar until most of the nut butter comes off the sides and incorporates with the milk. Use a small spatula to scrape the sides if not all releases.
- Pour the milk and nut butter mixture into a blender and blend until smooth and frothy, at least 30 seconds.
- In the now-empty nut butter jar, add desired amount of ice and pour the nut butter-infused milk on top until the jar is 2/3-3/4 full (the remaining space will be for your espresso/matcha/tea of choice, so leave enough room for whatever you'll be adding).
- Add your espresso, cold brew concentrate, matcha, chai, or addition of choice, and stir.
- Enjoy your nutty caffeinated (or not) creation in the cutest (and easily transportable) container: one of our nut butter jars!
