Recently, we've been celebrating all things CASHEW. We've really enjoyed discovering different ways to use our Cashew Butter with Coconut Nectar, including plenty of new savory recipes. This Creamy Cashew Avocado Sauce is quick, easy, and super versatile. It's perfect for dipping veggies, tossing in salads, or adding as a scoop (or two) to rice or quinoa bowls.
- 1 ripe avocado
- 1/4 cup olive oil
- 1 cup parsley
- juice of one lemon
- 2 tbsp Big Spoon Roasters Cashew Butter with Coconut Nectar
- 3 cloves garlic (roasted)
- salt + pepper to taste
Blend all ingredients together in food processor, and enjoy!
