November Featured Jam: Jamnation Apricot Red-Handed

Jamnation's goal is simple: to make "damn good jam," combining the best local produce with fair trade spices and unrefined cane sugar. Founder Gillian Reynolds meticulously sources fruit from farms within a 200-mile radius of San Francisco, CA, often tasting 10+ varieties before landing on the perfect fruit for one of her jams.
Gillian and her team honor these exceptional ingredients with carefully developed recipes and classic French techniques. Gillian's brother, Christopher Reynolds, sous chef at Morimoto in NYC, brings his expertise to help perfect the recipes. On average, they use 50% more fruit and 50% less sugar than your typical commercial jam and thicken each batch with longer cook times rather than pectin, resulting in concentrated fruit flavor.
This month's featured jam, Jamnation Apricot Red-Handed, is a sublime blend of sweet and tart Royal Blenheim apricots, organic unrefined cane sugar, organic lemon juice, and organic almond extract. Royal Blenheims, also known as the "king of apricots," are renowned for their superior flavor but are hard to find because they bruise easily and are therefore unpopular with grocers. Fortunately, Gillian sourced some from a small family farm in Winters, CA, to create this ultra-flavorful jam.
