Balsamic Strawberry Jam

As we enter the height of spring when everything is in full bloom and farmers' markets are bursting at the seams with fresh produce, baked goods, and flowers, it’s the perfect time to feature a local NC jam maker. Made just down the road in Apex, NC, Mrs. Ruth’s Jams showcases NC ingredients cooked low and slow using just fruit, cane sugar, and pectin. As Mrs. Ruth puts it, “our jams are only the good stuff and made with patience, not preservatives.”
Mrs. Ruth started jam making as a way to provide her husband with a steady supply of strawberry jam. Their friends quickly discovered the delicious jam and requested more. Then one day while visiting her favorite bakery, Mrs. Ruth was caught adding a generous bit of her jam to their fresh-baked bread. The shop owner asked to start selling it, and the rest is history!
Embracing the season, we’ve selected Mrs. Ruth’s Balsamic Strawberry as our May 2019 Featured Jam. The balsamic vinegar sourced from Peak Olive Oil in Cary, NC, beautifully highlights the naturally sweet, lush flavor of the fresh local strawberries. Cane sugar provides additional sweetness without making it cloying. The result is a jam that eats like a fresh bowl of farmers’ market berries. We love it on our morning toast with butter, dolloped on a biscuit, or paired with our Mission Almond Butter and chocolate chips baked into perfect bite-size pop tarts (see here for recipe).
Peanut Cocoa Butter

Our coarsely ground, yet smoothly spreadable Peanut Cocoa butter combines stone-milled dark chocolate (made bean-to-bar from whole cacao) with fresh-roasted peanuts, wildflower honey, and a touch of sea salt. As you taste it, the rich, buttery flavors of toasted nuts give way to the bright, earthy complexity of dark chocolate, punctuated by just enough salt to remind you about the honey. That pleasant, dark-chocolate crunch? Those are the fresh-roasted cocoa nibs (pieces of whole roasted cocoa beans that have been separated from the husk). We love Peanut Cocoa in a bowl of ice cream, with fresh fruit, and of course, right out of the jar.
