Quince & Apple is a kindred business. Founded by husband and wife Matt and Clare Stoner Fehsenfeld in 2009, Quince & Apple has remained unwavering in its commitment to making products in small batches, even as its business grows. Each jam, preserve, and syrup is lovingly handmade in their downtown kitchen in Madison, WI, using all natural, non-GMO ingredients, sourced locally whenever possible. Every batch is taste tested to meet exacting standards, and meticulously jarred by hand.

They adjust recipes to suit the seasonal characteristics of each fruit, and create each product with food pairings in mind. Flavor profiles are subtle, well-balanced, and deliberately not too sweet, making them ideal for pairing with cheese, ice cream, and of course, nut butter.

This month’s featured jam, Figs and Black Tea, is made with dried figs reconstituted in black tea, giving it an extra depth of flavor. Try it with our favorite nut butter pairings - classic Peanut Butter or Tigerwalk Espresso nut butter - on fluffy buttermilk biscuits for delectable breakfast sandwiches.

Tigerwalk Espresso

Ingredients

Heirloom Mission Almonds, Oregon Hazelnuts, Equator Coffees & Teas Tigerwalk Espresso, Raw Organic Coconut Crystals, Organic Madagascar Vanilla, Vietnamese Cinnamon, Sea Salt 

Each spring, we collaborate with a different coffee roaster we love to create a new Espresso Nut Butter blend. We are beyond excited to announce the Spring 2018 iteration  - 
Tigerwalk Espresso - which we developed in partnership with San Rafael, CA-based Equator Coffees & Teas. This limited batch collaboration combines fresh-roasted heirloom California Mission almonds, Oregon Barcelona and Clark variety hazelnuts, coconut crystals, vanilla, cinnamon, and sea salt with the coffee roaster's flagship Tigerwalk Espresso and its signature flavors of caramel and cherry-toned chocolate. The new recipe is already a favorite at Big Spoon Roasters’ headquarters, where it has been seen dolloped atop fresh fruit, toast, and waffles (in addition to being enjoyed straight from the jar). We can attest that it is particularly delicious on a fresh-baked scone with a classic cappuccino.

Working with our like-minded friends at Equator Coffees & Teas to create this nut butter has been a special honor. Founded in 1995 by Brooke McDonnell and Helen Russell, Equator has grown to encompass seven retail shops, more than 500 wholesale customers, and over 100 employees, while maintaining an unyielding dedication to quality, sustainability, and social responsibility. Trailblazers in many ways, they were one of the first coffee roasters in the country to back the Fair Trade Certified label to ensure farmers a better standard of living. In 2011, they obtained B-Corporation status - a certification with rigorous standards for transparency and accountability in financial records and supply chain, as well as consideration of workers, the community, and the environment in all decision making. McDonnell and Russell can also be credited with helping to break the glass ceiling in the all too often male-dominated world of specialty coffee.
